  • 1 medium yellow onion finely diced
  • 2 medium carrots peeled and finely diced
  • 2 stalks celery finely diced
  • 4 cloves garlic minced
  • 2 tbsp double-concentrated tomato paste bloomed in oil for rich caramelized flavor
  • 1 tsp ground cumin adds warm earthy depth
  • 1 tsp smoked paprika or sweet Hungarian paprika
  • 1 tsp dried oregano crushed between palms
  • 1/4 tsp crushed red pepper flakes optional, for gentle back-of-the-throat warmth
The Soup Base & Lentils
  • 1 cup brown or French green lentils rinsed, picked over, and drained
  • 5 cups low-sodium vegetable broth or chicken stock if not vegetarian
  • 1 can (28 oz) crushed San Marzano tomatoes with their rich juices
  • 1 whole dried bay leaf discard before serving
  • 1 1/2 tsp fine sea salt plus more to taste
  • 1/2 tsp freshly cracked black pepper to taste
Greens & Bright Finishing
  • 2 cups fresh baby spinach or chopped kale stems removed, packed
  • 1 to 2 tbsp fresh lemon juice from half a fresh lemon, essential to balance acidity
  • 1/4 cup fresh flat-leaf parsley finely chopped, for garnish
  • Grated Parmesan cheese or vegan cheese optional, for serving with crusty sourdough bread

Equipment

  • 5 to 6-Quart Enameled Cast Iron Dutch Oven distributes heat evenly for simmering lentils without hot spots
  • Chef's Knife & Cutting Board for dicing the aromatic mirepoix vegetables
  • Fine Mesh Sieve for thoroughly picking over and rinsing dried lentils
  • Wooden Sauté Spoon ideal for blooming tomato paste and scraping browned fond from the pot

Method

  1. Warm 2 tablespoons of extra-virgin olive oil in a 5 to 6-quart enameled Dutch oven over medium heat. Add the diced yellow onion, carrots, and celery. Cook for 6 to 8 minutes, stirring occasionally, until the vegetables soften and the onions turn sweet and translucent.

  2. Add minced garlic, tomato paste, ground cumin, smoked paprika, dried oregano, and red pepper flakes. Stir constantly for 60 to 90 seconds. The tomato paste will caramelize against the pot bottom into a deep mahogany color and release an intensely savory aroma.

  3. Add the rinsed brown lentils, vegetable broth, bay leaf, and 1 teaspoon of salt. Bring the liquid to a lively boil over medium-high heat. Immediately reduce heat to low, cover the pot with the lid slightly ajar, and simmer for 20 to 22 minutes until the lentils are tender to the bite but still hold their shape.

  4. Pour in the 28-ounce can of crushed San Marzano tomatoes and add the fresh baby spinach. Stir well and simmer uncovered over medium-low heat for 8 to 10 minutes. The soup will thicken into a rich, velvety consistency while the spinach gently wilts into the broth.

  5. Remove and discard the bay leaf. Remove pot from heat and stir in fresh lemon juice and remaining salt and black pepper to taste. Ladle the hot soup into warm shallow bowls. Drizzle each bowl with extra-virgin olive oil, shower with fresh parsley, and serve with toasted crusty sourdough bread.

Notes

Lentil Selection: Brown lentils or French green (Puy) lentils are ideal because they hold their shape during simmering without turning into mush. Avoid red lentils in this specific recipe unless you intentionally want a thick, pureed dal consistency.
The Acid Timing Secret: Never simmer raw dried lentils directly in high-acid crushed tomatoes from the start. Acid tightens the pectin in legume cell walls, keeping them firm. Simmering the lentils in vegetable broth first ensures they turn melt-in-your-mouth tender.
Texture Customization: For an ultra-creamy soup without dairy, use an immersion blender to puree 2 cups of the finished soup directly in the pot, leaving plenty of whole lentils for hearty bite.
Storage & Freezing: Refrigerate leftovers in airtight glass containers for up to 5 days. Lentils naturally absorb liquid as they chill, so stir in a splash of water or broth when reheating. Freeze for up to 3 months.
