Method
- Plug in your mini waffle maker and allow it to preheat fully until the indicator light shuts off (about 2 to 3 minutes).
- In a small bowl, whisk the egg until smooth and frothy. Stir in almond flour, baking powder, salt (and sweetener/vanilla if making sweet chaffles). Stir in about 6 tablespoons of shredded mozzarella, reserving 2 tablespoons for the crust trick.
- Sprinkle 1 tablespoon of the reserved shredded cheese directly onto the bottom hot waffle grid. Pour half of the egg batter (about 2.5 to 3 tablespoons) directly over the center, then sprinkle another tablespoon of cheese over the batter.
- Close the lid gently. Do not open the waffle iron early. Cook for 3 to 4 minutes until steam stops actively billowing from the sides and the chaffle is deep golden brown.
- Remove the chaffle with silicone tongs and immediately transfer it to a wire cooling rack for 2 to 3 minutes. Repeat with the remaining batter to make the second chaffle. The crust will firm up into a crunchy exterior as it cools.
Notes
Always cool chaffles on a wire rack rather than a flat plate; steam trapped under a plate will make the bottom soggy.
Low-moisture part-skim mozzarella has the most neutral flavor, making it ideal for both sweet and savory applications.
To reheat, pop cold chaffles straight into a standard toaster on medium heat for 1 to 2 minutes—they come out crispier than when fresh!
Store cooked chaffles in a sealed container in the fridge for up to 5 days, or freeze between parchment sheets for up to 3 months.
